At this time, it is not possible to use the Backup Client Data function in Office Manager to write a client back up directly to a CD or DVD.

One workaround to accomplish this is to write the client backup from Office Manager to a directory on your local hard disk.  Once that is complete, you can then write that directory or its contents to a CD or DVD using your favorite CD/DVD authoring software.
